Same problem here with one of my programs. I raised this in the OD beta issues thread on the forums last night. Every time I reboot the original icon comes back. I would also add, like Steph, I keep all my icons in the same folder.........in fact all the other icons in the dock are from the same folder however this is the only one out of the ten icons that changes back to its original.
