Is there a way to completely disable the theme for the taskbar?

It kind of destroys the looks that Start10 was doing, and the option to use the theme from Start10 wasn't resolving the issue.

I couldn't find the option yet - does anyone know if it's hidden somewhere?

Hello,
Sorry to hear you are having issues. There is no option available for totally un-skin the Taskbar while skin the frames etc. But you can choose other theme to be skin on that taskbar and start menu refer to below screenshot.
